It's good to hear that my recreated folder might still catch the Spam related e-mails if this is really what will happen. My problem is that I need to come up with a 'reason' for why this is happening rather than a one off especially since it was entered into Spiceworks as a helpdesk ticket to my IT team.

Which I know there can be a one off situations with other variables. We use Proofpoint Essentials as our Spam filter but this has never been an issue until now. This leads me to believe that he did something by accident, that he doesn't realize. that he has and all still have their Spam folder. I've checked a few users that have the same kind of profile, permissions, etc. So far he is the only user that this is happening to. My user are using Outlook client but I checked his account and the folder is not available in both. If you are using such a device or program you may be able to resend previous spam messages to the user through the management interface which would get the old spam email back. Are you by chance using a third party anti-spam device or program that diverts spam email to the "Spam" folder? If so your recreated "Spam" folder should start receiving spam email as it comes in. Are you using Office 365 webmail and Outlook? I just looked at mine in both methods and I do not have a "Spam" folder, just the "Junk Email" folder.
